Ajíaco de papas
Ingredients
½ cup of Oil
1 Large onion, finely chopped
1 Garlic clove, finely chopped
Fresh yellow chili pepper ground
1 teaspoon of Paprika or red pepper
1 kilogram of Peeled white potatoes, boiled and chopped
¾ cup of Beef broth
¾ cup of Crumbled fresh cheese
3 tablespoons of Chopped parsley
½ cup of Evaporated milk
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To prepare this delicious potato ajíaco, boil the potatoes, peel them, and then mash them with the help of a fork.
Step 2 : Once ready, set aside.
Step 3 : In a pot, sauté the garlic, onion, and red chili pepper.
Step 4 : Then, season with salt and pepper, add the potatoes, water, and milk, and mix everything well.
Step 5 : Next, add the diced cheese and remove from heat.
Step 6 : To serve, accompany the potato ajíaco with white rice and garnish with slices of hard-boiled egg and chopped parsley.
