Ingredients

1 cup of Cooked, granulated quinoa

½ cup of Boiled and peeled broad beans

1 Boiled and shelled corn kernels

3 Diced tomatoes

1 cup of Diced cheese

4 tablespoons of Olive oil

½ Chopped onion

1 tablespoon of Chopped rocoto

3 tablespoons of Chopped parsley

½ tablespoon of Wine vinegar

1 Lemon

6 Chopped olives

6 Boiled potatoes

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a bowl, place the broad beans, corn, and tomatoes.

Step 2 : Add the cheese, salt to taste, pepper, and two tablespoons of oil.

Step 3 : Separately, in another bowl, mix the onion with the rocoto, parsley, vinegar, lemon juice, salt to taste, pepper, and the remaining oil.

Step 4 : Then, combine both preparations and add the quinoa and olives.

Step 5 : Finally, serve accompanied by boiled potatoes.
