Tarwi and Corn Ceviche
Ingredients
100 grams of Tarwi or choco
100 grams of Corn
½ kilogram of Ollucos
150 grams of Onion
1 Rocoto
1 Garlic clove
10 Lemons
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Wash, clean, and julienne the ollucos.
Step 2 : Cook in water until al dente.
Step 3 : Repeat the process with the tarwi and dehusked corn.
Step 4 : In a bowl, combine the ollucos, tarwi, and dehusked corn.
Step 5 : Add the lemon juice, rocoto, ground pepper, and salt to taste.
Step 6 : Add the onion and mix well.
