Ingredients

2 kilograms of Pork meat

2 kilograms of Bone

2 kilograms of Tamal flour

3 tablespoons of Vinegar

Aji panca in blender

Yellow aji in paste

Lard

Fresh yellow aji

Hard-boiled eggs and olives

Peanuts

Garlic

1 pinch of Pepper

Cumin

Salt and oil

Preparation

Step 1 : To prepare the Peruvian tamal, first marinate the pieces of meat with salt, pepper, cumin, aji panca, and vinegar, then let the mixture rest for one hour.

Step 2 : Next, in a hot pot, sauté chopped onion and garlic; after 5 minutes, add the aji mirasol and a bit more cumin.

Step 3 : Then, add the marinated meats, sauté for 20 minutes, and add 2 cups of water.

Step 4 : Let it cook for 1 hour.

Step 5 : For the dough, clean the tamal leaves with a damp cloth, and prepare the hard-boiled eggs, peanuts, fresh yellow aji, and shredded meat.

Step 6 : In a pot, melt the lard, add the tamal flour, and mix with the meat's juice.

Step 7 : When the dough reaches the right consistency, let it cool, then proceed to assemble the tamales.

Step 8 : This way, the delicious Peruvian tamal will be ready to enjoy.
