Stuffed Rocoto
Ingredients
12 Rocotos
700 grams of Ground meat
4 Chilies
2 Onions
3 Eggs
3 tablespoons of Black raisins
3 tablespoons of Peanuts
6 Black olives
1 Bay leaf
1 can of Evaporated milk
Grated cheese
Sugar
Oil
Parsley
Oregano
Pepper
Salt
Preparation
Step 1 : Using a knife, remove the top layer of each rocoto and remove all the filling.
Step 2 : Then, place the rocotos in a pot with water and sugar to boil.
Step 3 : Once boiling, remove the water and put new water with sugar to boil again.
Step 4 : In a pan, sauté the onions, chilies, raisins, peanuts, olives, ground meat, bay leaf, chopped parsley, oregano, pepper, and salt to taste.
Step 5 : Mix everything very well and, once ready, proceed to stuff the rocotos.
Step 6 : After stuffing, find a baking dish and place the rocotos in it to go into the oven.
Step 7 : Before baking, top with a mixture of evaporated milk, egg, salt, and pepper.
Step 8 : Sprinkle some grated cheese on top and let it gratinate in the oven.
