Solterito Arequipeño
Ingredients
½ kilogram of Fresh lima beans
2 Corn on the cob
1 teaspoon of Anise
Sugar
1 Diced onion
150 grams of Fresh cheese
1 cup of Chopped green olives
1 Tomato
Oil
Vinegar
Chopped parsley
1 Peeled and cubed carrot
1 pinch of Salt
Lettuce leaves
1 Diced rocoto
1 pinch of Pepper
Preparation
Step 1 : To prepare this delicious dish, boil the corn in water with sugar and anise until ready.
Step 2 : Once done, let it rest and then remove the kernels.
Step 3 : Meanwhile, in another pot, cook the peeled lima beans with the cubed carrot and a pinch of salt.
Step 4 : Once boiled, drain and let rest.
Step 5 : In a separate container, combine the onion and rocoto, season with salt, pepper, vinegar, and oil, then mix well.
Step 6 : Next, add the tomato, lima beans, carrots, corn, diced fresh cheese, olives, and parsley.
Step 7 : Finally, mix all ingredients and let it rest for a few minutes before serving.
