Solterito Arequipeño
Ingredients
½ kilogram of Fresh fava beans
2 Choclos
1 teaspoon of Anise
Sugar
1 Onion in small cubes
150 grams of Fresh cheese
1 cup of Chopped green olives
1 Tomato
Oil
Vinegar
Chopped parsley
1 Peeled and cubed carrot
1 pinch of Salt
Lettuce leaves
1 Chopped rocoto
1 pinch of Pepper
Preparation
Step 1 : To prepare this delicious dish, boil the choclos in water with sugar and anise until they are ready.
Step 2 : Once ready, let them rest and then remove the kernels.
Step 3 : In another pot, cook the peeled fava beans together with the chopped carrot and a pinch of salt.
Step 4 : Once cooked, drain and let rest.
Step 5 : In a separate container, place the onion and rocoto, season with salt, pepper, vinegar, and oil, then mix well.
Step 6 : Next, add the tomato, fava beans, carrots, choclos, sliced fresh cheese, olives, and parsley.
Step 7 : Finally, mix all ingredients and let rest for a few minutes before serving.
