Papa a la huancaína

Ingredients

2 Large yellow chilies

250 grams of Fresh cheese

8 Large soda crackers

1 cup of Evaporated milk

¼ cup of Vegetable oil

1 Small chopped onion

1 Minced garlic clove

4 Boiled potatoes, sliced

2 Boiled eggs

8 Black olives

4 Lettuce leaves

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare the recipe, start by making the dressing.

Step 2 : In a frying pan, pour two tablespoons of oil and add the onion, garlic, chopped chilies, and pepper to taste.

Step 3 : Cook over medium heat until golden, avoiding burning.

Step 4 : Once the onion is transparent, remove the sauté from heat and transfer it to the blender.

Step 5 : Add the cheese, soda crackers, evaporated milk, oil, and a pinch of salt.

Step 6 : Blend for a few minutes until you get a smooth mixture.

Step 7 : Adjust salt if necessary and let the Huancaína sauce rest.

Step 8 : To serve, place a lettuce leaf on a plate and add some boiled potato slices.

Step 9 : Pour the Huancaína sauce over the potatoes and decorate with two olives and sliced boiled eggs.
