Muy Muy Ceviche
Ingredients

1 ½ kilogram of Very very fish
3 Small onions
15 Lemons with plenty of juice
3 Chilies
1 A handful of chopped fresh cilantro
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To prepare ceviche, start by slicing the onions into julienne strips and washing them with cold water to remove their bitterness.
Step 2 : Then, finely chop the chilies and cilantro.
Step 3 : Next, cut the fish into small pieces and place them in a container with cold water and salt.
Step 4 : After a few minutes, rinse the fish with water and place it in a container together with the onion, chilies, lemon juice, chopped cilantro, salt, and pepper to taste.
Step 5 : Let the mixture rest for about 20 minutes so the fish cooks with the acidity of the lemon.
Step 6 : You can decorate the ceviche with a little more chopped cilantro before serving.
