Lentil Salad with Vinaigrette

Ingredients

9 tablespoons of Olive oil

1 Cubed eggplant

1 teaspoon of Ground garlic

½ Chopped onion

1 tablespoon of Chopped cilantro

1 tablespoon of Chopped parsley

3 tablespoons of Lemon juice

1 tablespoon of Apple cider vinegar

¼ teaspoon of Cumin

1 Cubed bell pepper

2 Chopped celery stalks

1 cup of Cooked lentils

3 Cubed tomatoes

8 Lettuce leaves

½ Sliced pickles

¼ cup of Alfalfa sprouts

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a skillet over high heat, heat three tablespoons of oil.

Step 2 : Sauté the cubed eggplant and half a teaspoon of garlic, stirring constantly until the eggplant is soft and golden.

Step 3 : Season and set aside.

Step 4 : In a bowl, mix the onion with cilantro, parsley, lemon juice, vinegar, remaining garlic, and oil.

Step 5 : Season with cumin, salt to taste, and pepper.

Step 6 : Add this dressing to the eggplant and bell pepper.

Step 7 : Add the celery, lentils, and tomato.

Step 8 : Mix everything together and serve over lettuce leaves.
