Green Tamalitos
Ingredients
1 kilogram of Shelled corn
2 cups of Cilantro leaves and stems
1 cup of Spinach
1 ½ cup of Vegetable oil
1 pinch of Salt
Green corn leaves (panca)
Creole salsa
1 pinch of Pepper
Preparation
Step 1 : To prepare the tamales, blend the corn, cilantro, and spinach in a processor.
Step 2 : In a bowl, knead the above mixture and add a little oil.
Step 3 : Mix constantly with a wooden spoon until you get a homogeneous mixture.
Step 4 : Then, season with salt and pepper to taste.
Step 5 : Next, clean the panca leaves and wrap the tamales, placing 2 tablespoons of dough for each, tying them with strips of panca.
Step 6 : Reserve the assembled tamales.
Step 7 : Once all the tamales are ready, place several panca leaves at the bottom of a pot.
Step 8 : Add three cups of water and place the tamales on top.
Step 9 : Cover with more panca leaves, cover the pot, and cook over high heat for 25 minutes.
Step 10 : After this time, turn off the heat and let the tamales cool.
Step 11 : Once cooled, the tamales are ready to be served accompanied by creole salsa.
