Green Tamale
Ingredients
1 kilogram of White corn
2 cups of Cilantro leaves and some sprigs
1 cup of Spinach
1 ½ cup of Vegetable oil
1 pinch of Salt
Green corn husks
Creole sauce
1 pinch of Pepper
Preparation
Step 1 : To prepare these healthy tamales, the first step is to process the corn, cilantro, and spinach in a food processor or grain grinder until reaching a texture similar to cooked oats.
Step 2 : It is important to avoid making the texture too liquid, so it is recommended to avoid using a blender.
Step 3 : Once the mixture is ready, transfer the processed corn to a bowl and add oil, mixing gently with a wooden spoon or spatula until smooth.
Step 4 : Next, add salt and pepper to taste.
Step 5 : Carefully clean the corn husks with a damp kitchen cloth and proceed to assemble the tamales, using 1½ to 2 tablespoons of corn mixture for each one.
Step 6 : Wrap the tamales with the husks and tie them with kitchen twine.
Step 7 : When all the tamales are ready, place the remaining husks at the bottom of a wide pot.
Step 8 : Arrange the tamales on top of the husks and pour 2 to 3 cups of boiling water over them.
Step 9 : Cover with more husks and bring the pot to a boil, covered.
Step 10 : Let the tamales cook for about 25 minutes.
Step 11 : Once done, remove from heat and let cool.
Step 12 : The tamales can be eaten immediately, but it is recommended to wait a few minutes so they hold their shape better.
Step 13 : To serve, place 2 tamales per person and accompany with creole sauce.
