Ingredients

1 kilogram of Duck meat

3 tablespoons of Ground garlic

1 cup of Sour orange juice

2 Arnaucho chili

3 tablespoons of Yellow chili, chopped

3 tablespoons of Mirasol chili, chopped

3 tablespoons of Oil

1 Diced onion

½ kilogram of Thinly sliced onion

½ kilogram of Boiled cassava

1 Lettuce

½ Rocoto in slices

1 pinch of Salt

1 pinch of Pepper

1 pinch of Cumin

Preparation

Step 1 : To prepare the duck ceviche, start by cutting the duck into pieces and marinating it with salt, pepper, cumin, garlic, sour orange juice, Arnaucho chili, yellow chili, and Mirasol chili for 30 minutes.

Step 2 : Then, brown the duck in hot oil.

Step 3 : In a separate pot, sauté garlic, onion, Mirasol chili, and yellow chili leftovers.

Step 4 : Add the duck with its marinade, season, and cook for 30 minutes.

Step 5 : Next, add the sliced onion and cook for an additional 15 minutes.

Step 6 : Finally, serve the duck ceviche accompanied by boiled cassava, lettuce, and rocoto slices.
