Criolla Mala Rabia
Ingredients
5 Fried plantains
250 grams of Fresh cheese in cubes
3 tablespoons of Vegetable oil
1 Onion in cubes
1 Tomato in cubes
1 Yellow chili in cubes
1 teaspoon of Panca chili
2 tablespoons of Cilantro leaves
1 pinch of Salt
Preparation
Step 1 : Cook the plantains in a pot with water until they are soft, then peel and mash them, reserving the cooking water.
Step 2 : Heat oil in a pot and sauté the onion until transparent.
Step 3 : Add the chilies and sauté until golden.
Step 4 : Then add the mashed plantains, and if very dry, add some of the plantain cooking water.
Step 5 : Finally, add the fresh cheese and cilantro, mix well, and serve.
