Conch Ceviche

Ingredients

100 grams of Fresh conchs

1 Red onion, julienned

2 Limo chili, finely chopped

4 Garlic cloves, crushed

10 Lemons

1 Cilantro branch, finely chopped

Lettuce leaves

Olive oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : All the conchs should be checked to ensure they are properly closed and then washed.

Step 2 : Those conchs that are open should be discarded.

Step 3 : Carefully open the conchs with the help of a knife.

Step 4 : Then, place them in a bowl along with the onion, limo chili, cilantro, garlic, salt, and pepper.

Step 5 : Add lemon juice and olive oil, and mix everything carefully to blend the flavors.

Step 6 : Allow to marinate for 5 minutes.

Step 7 : If you want it spicier, you can add rocoto chili.

Step 8 : To serve, place on lettuce leaves and accompany with cooked sweet potato, Peruvian corn, and herbs.
