Chuno Bread Roll with Cheese
Ingredients
250 grams of White chuno
350 grams of Fresh cheese in slices
1 Bundle of corn husks
¾ cup of Evaporated milk
¾ cup of Water
¼ teaspoon of Star anise
Preparation
Step 1 : The chunos should be soaked overnight.
Step 2 : Then, peel, clean, rinse, and drain them.
Step 3 : Cut them in half without fully separating and fill with cheese.
Step 4 : Place the corn husks at the bottom of a clay pot and arrange the stuffed chunos on top.
Step 5 : Pour the milk mixed with water and star anise over the chunos, cover the pot, and cook over medium heat until the chunos are cooked, approximately one hour.
Step 6 : Serve the dish accompanied by the Yatan sauce.
Step 7 : To prepare the Yatan sauce, fry chopped rocoto, onion, garlic, and huacatay leaves in oil, then blend with fresh cheese, oil, and salt.
