Ingredients

250 grams of Corvina

1 Lime

3 Finely chopped garlic cloves

1 tablespoon of Chopped cilantro to taste

1 Julienned red onion

10 Lemons

3 tablespoons of Concentrated fish broth

3 Boiled sweet potato

½ cup of Canchita

1 pinch of Aji tasteless

½ teaspoon of Salt

½ teaspoon of Pepper

Preparation

Step 1 : To prepare this ceviche, start by julienning the onion and soaking it in water, then wash it three times.

Step 2 : Next, chop the lime into very small squares.

Step 3 : Then, cut the corvina into cubes and place it in a bowl along with the chopped garlic, salt, and pepper.

Step 4 : In another container, put some fish with a little lime, a sprig of cilantro, the chopped heart of the onion, and squeeze in the juice of the 10 lemons.

Step 5 : Then mix with a spoon or mortar, strain this mixture, and pour all the juice over the fish with garlic, salt, and pepper.

Step 6 : Finally, add the cold fish broth, salt, lime, chopped cilantro, and julienned onion.

Step 7 : The ceviche is ready to serve accompanied by boiled sweet potato and canchita.

Step 8 : It can be decorated with lettuce leaves and boiled corn.
