Ingredients

250 grams of Corvina fish

1 Lime juice

3 Finely chopped garlic cloves

1 tablespoon of Chopped cilantro to taste

1 Julienned red onion

10 Lemons

3 tablespoons of Concentrated fish stock

3 Boiled sweet potato

½ cup of Canchita (toasted corn snack)

1 pinch of Ajinomoto (umami seasoning)

½ teaspoon of Salt

½ teaspoon of Pepper

Preparation

Step 1 : To prepare this ceviche, start by slicing the onion into julienne strips and soaking it in water, then rinse three times.

Step 2 : Next, dice the lime juice into very small cubes.

Step 3 : Then, cut the corvina into squares and place in a bowl with the chopped garlic, salt, and pepper.

Step 4 : In another container, place some fish with a little lime juice, a sprig of cilantro, the chopped onion heart, then squeeze and add the juice of the 10 lemons.

Step 5 : Then, mix with a spoon or mortar, strain this mixture, and pour all the juice over the fish with garlic, salt, and pepper.

Step 6 : Finally, add the cold fish stock, salt, lime juice, chopped cilantro, and julienned onion.

Step 7 : The ceviche is ready to serve, accompanied by boiled sweet potato and canchita.

Step 8 : It can be decorated with lettuce leaves and boiled corn.
