Bean Escabeche
Ingredients
500 grams of Canary Beans
2 Red Onions
2 Yellow Chili Peppers
4 Garlic Cloves, minced
1 tablespoon of Panca chili powder
2 Bay Leaves
5 Black Peppercorns
1 cup of Vegetable Broth
½ teaspoon of Oregano
¼ cup of Olive Oil
½ cup of Red Wine Vinegar
Salt and Cumin
Preparation
Step 1 : The beans should be soaked overnight and then cooked in fresh water with salt until they are tender.
Step 2 : Once cooked, drain and set aside.
Step 3 : In a skillet, add the oil and sauté the onion with the garlic and yellow chili peppers.
Step 4 : Next, add the panca chili, vinegar, and bay leaves; season with salt, pepper, and cumin.
Step 5 : Add the broth and let cook for 15 minutes.
Step 6 : Then, add the beans and incorporate the oregano.
