Ingredients

50 milliliters of Pisco

30 milliliters of Freshly squeezed lime juice

20 milliliters of Sugar syrup

1 Egg white

3 Drops of Angostura bitters

Preparation

Step 2 : Fill the shaker with ice and add all the ingredients, except for the Angostura, which is reserved for the end of the process.

Step 3 : It's important to shake vigorously to ensure proper emulsion with the egg white.

Step 4 : The drink should be well chilled and form a foam similar to meringue.

Step 5 : Once shaken, quickly strain the cocktail into a sour glass, a lowball, or a kero glass.

Step 6 : The resulting drink should have a white color and form a foam layer about an inch thick.
