Chicha loretana
Ingredients
500 grams of Corn flour or yuca flour
½ Chancaca
3 Fig leaves
1 Cinnamon stick
3 liters of Water
Ground cinnamon
Preparation
Step 1 : In a pot, place enough water and bring it to a boil with the chancaca, fig leaves, and the cinnamon stick.
Step 2 : Once it boils and reduces a bit, add the previously dissolved flour in a little water, and incorporate it into the pot while stirring constantly.
Step 3 : Keep stirring until the mixture thickens, then turn off the heat and let it cool.
Step 4 : Subsequently, pass the mixture through a strainer and store it in a clay vessel, where it will ferment for 15 days.
Step 5 : After this time, the drink will be ready to serve and enjoy.
