Rice Pudding with Vanilla
Ingredients
1 liter of Fresh milk
1 cup of Rice
2 teaspoons of Vanilla
1 cup of Pitted apricots
1 cup of Sugar
¼ cup of Butter
4 Eggs
½ Grated lemon
1 pinch of Cream of tartar
1 pinch of Salt
Preparation
Step 1 : In a pot with boiling milk, cook the rice for two minutes, adding a pinch of salt and vanilla.
Step 2 : Place this mixture in a double boiler until the rice is cooked, approximately forty minutes, stirring constantly.
Step 3 : Let it cool for one hour.
Step 4 : Meanwhile, in a separate pot, cook the apricots in a cup of water for five minutes.
Step 5 : Then, add a quarter cup of sugar and continue cooking for another five minutes.
Step 6 : Set this preparation aside.
Step 7 : Preheat the oven to 180°C.
Step 8 : In a bowl, beat the butter with the remaining sugar and the egg yolks until creamy.
Step 9 : Add the rice and lemon zest.
Step 10 : Beat the egg whites until stiff with a pinch of salt and cream of tartar, then fold into the previous mixture gently.
Step 11 : Pour into a previously greased rectangular baking dish and bake for thirty minutes.
Step 12 : Once ready, remove from the oven, cover with the apricots and their syrup, and bake for another ten minutes.
Step 13 : Serve warm or cold.
