Peruvian Zambito Rice
Ingredients
1 ½ cup of Water
6 Cloves
2 Cinnamon sticks
¼ kilogram of Chancaca pieces
4 tablespoons of Chopped walnuts
¼ cup of Port wine
6 Star anise
2 Peppercorns
½ cup of Rice
4 tablespoons of Grated dry coconut
4 tablespoons of Raisins
Ground cinnamon
Preparation
Step 1 : In a pot, combine water with star anise, cloves, cinnamon sticks, and peppercorns, and bring to a boil.
Step 2 : Then, add the rice and cook on low heat.
Step 3 : In another pot, boil chancaca with water until it slightly thickens.
Step 4 : Next, mix the melted chancaca with the cooked rice and add the dried fruits and port wine.
Step 5 : Cook the mixture, stirring constantly.
Step 6 : When the mixture reaches the desired consistency, let it cool slightly and pour into a serving dish.
Step 7 : Before serving, sprinkle with ground cinnamon.
