Yuca Manjar Blanco
Ingredients
1 kilogram of Cooked yuca
1 liter of Milk
2 cups of Sugar
1 Whole cinnamon
3 Beaten eggs
Ground cinnamon
Preparation
Step 1 : To prepare this recipe, start by blending the cooked yuca with a little milk and then strain this mixture.
Step 2 : Combine with the remaining milk and place in a pot along with a piece of whole cinnamon.
Step 3 : Add sugar to taste (between 1 and 2 cups) and bring the mixture to a low heat, stirring constantly until it thickens slightly.
Step 4 : Then, remove the pot from the heat and let it cool slightly.
Step 5 : Add the previously beaten eggs and mix everything well.
Step 6 : Return the pot to the heat and cook until the mixture reaches the desired consistency, avoiding boiling during the process.
Step 7 : Once the desired thickness is achieved, remove from heat and pour into a serving dish.
Step 8 : Finally, for a special touch, sprinkle ground cinnamon on top before serving.
