The three milk cake is a very popular dessert across Latin America; however, in Peru, it is made in its own style. You can add fruits of your choice to accompany it.
This recipe, originating from the coastal region of the country, features a fluffy sponge cake soaked in a mixture of three types of milk, giving it a moist texture and an unmatched sweet flavor.
Its name comes precisely from the three types of milk used in its preparation: evaporated milk, condensed milk, and cream. These ingredients grant the cake its characteristic moisture and softness, making it an irresistible dessert.

Peruvian Three Milk Cake
Ingredients
1 ½ cup of Wheat flour
6 Eggs
1 cup of White sugar
½ cup of Powdered sugar
½ teaspoon of Baking powder
½ teaspoon of Ground cinnamon
1 can of Evaporated milk
1 can of Condensed milk
2 cans of Cream
Vanilla essence
Preparation
Step 1 : Start by greasing and flouring a baking dish, then set aside.
Step 2 : Next, sift the flour with baking powder and ground cinnamon.
Step 3 : In a separate bowl, beat the egg whites until stiff peaks form with half of the sugar and set aside.
Step 4 : In another bowl, using a mixer, cream the egg yolks with the remaining sugar and vanilla.
Step 5 : Then, gently fold the beaten egg whites into the yolk mixture along with the dry ingredients, using a spatula.
Step 6 : Pour the batter into the previously prepared baking dish and bake for 30 minutes.
Step 7 : To prepare the three-milk cream, place a pot over heat and add a can of cream along with the condensed and evaporated milk.
Step 8 : Add cinnamon sticks and vanilla, let it boil, then remove from heat.
Step 9 : Strain the mixture afterward.
Step 10 : Once the cake is ready, remove it from the oven and let it rest.
Step 11 : Then, make small holes on the cake and pour the hot milk mixture over it.
Step 12 : Let it cool and refrigerate for a few hours.
Step 13 : For decoration, in a bowl, beat a can of cold cream with powdered sugar and vanilla.
Step 14 : Whip until the mixture reaches a stiff consistency and chill in the refrigerator.
Step 15 : Spread the cream over the cake, cover completely, and decorate with red fruits and ground cinnamon.
