We could spend an entire afternoon reading about the origins of ceviche; which, without a doubt, are extensive and have several versions that, depending on your perspective, might be plausible or quite unlikely.
Where does it come from
However, today we will only discuss two of these. The most supported suggests it was created in what is now northern Peru, at a time when the inhabitants of the Inca Empire were already marinating fish.
This fish was prepared with salt and chili. Therefore, it can be considered a prototype of ceviche, which, when combined with ingredients brought by the Spaniards, would vary only slightly.
Similarly, another version narrates that it could have originated in Ecuador, and due to its proximity, this recipe later passed into Peruvian territory.
However, it is also speculated that the Spaniards took the ceviche prototype and prepared it in Europe with lime. This could have resulted in the first ceviche. Although there is no record or evidence to support this theory.
It doesn't matter which version is correct, because what matters is that this great dish was created and its flavor has made thousands of people happy, who continue to love it as if it were the first day they tasted it.

Also known as "sebiche," "seviche," and "cebiche," it is part of typical Peruvian cuisine, considered the emblem of the country, although it is prepared in other countries of the American continent as well.
This dish is characterized by being made from marinated meat, either fish or seafood. It can be combined with various ingredients like lemon, orange, onion, chili, tomato, avocado, cilantro, corn, cassava, lettuce, mayonnaise, and bell pepper.
