Potatoes Huancaína are a national culinary treasure in Peru, where this tuber is highly valued in gastronomy. It is used to accompany or prepare a variety of dishes, but it is especially distinguished in this delicious preparation.

The most famous version explains that it originated during the construction of what is known today as the Central Railway of Peru, more specifically along the route from Lima to Huancayo.

At a time when the food consumed by workers was not very varied—consisting of something linear and repetitive—, this is when the builders wanted to innovate and kindly requested a change.

On the way to Huancayo

In response, the women of Huancayo, who prepared food for the workers, agreed and decided to prepare boiled potatoes with a cheese, chili, and milk sauce; which turned out to be a complete success.

The workers were amazed by the dish, and referring to the creators, the recipe spread and was named "Potatoes Huancaína".

An alternative version that has become popular over time mentions that the origin of this dish was indeed at the Central Railway station of Peru, along the same route as the main story; except for the fact that the women of Huancayo prepared and sold this dish at the station.

Therefore, the food initially called "potatoes eaten en route to Huancayo" came to be known as "Potatoes Huancaína".

How to prepare them

After preparation, add a little milk and oil to complete the sauce, which is usually served with lettuce, olives, and egg.

Besides its delicious flavor, it is rich in vitamins A and B, and also contains nutrients and minerals such as magnesium, potassium, sodium, iron, copper, manganese, and zinc.
