The origin of its name has two versions: one refers to it being an ideal dish for a single person, and the other is related to family gatherings in the countryside of Arequipa, where it is said that single people eat this salad to maintain their figure and thus find a partner more easily.

Although it is not clear which of the two stories gave the name to the 'solterito,' what is certain is that its consumption gained more and more followers until it became a true symbol of Peruvian cuisine.

How is it prepared

Its preparation is very simple, consisting only of boiling the beans, chopping the other ingredients, seasoning, mixing everything, and serving.

Although it originated in the Arequipa region, it can now be said that this salad has spread throughout Peru and even to other countries in the Americas.

This dish is very common in Arequipeña picanterías as an appetizer or first course. It is usually seasoned with salt, pepper, vinegar, and oil.
